Zucchini Cake
3 eggs
1 cup oil
2 c. sugar
3 t. vanilla or 1 t. almond and 2 t. vanilla
2 c. flour
2 t. soda
1 t. salt
2 c. zucchini, grated
½ t. nutmeg (I left this out, but you can try it)
1 c. nuts, chopped (I left these out too, sorry, I love nuts!)
Combine cake ingredients. Bake @ 350 degrees for 40 – 45 minutes in greased and floured pan.
Frosting: 1 pkg. cream cheese, softened
1 cube butter or margarine
2 1/2 c. powdered sugar few drops almond extract
