Honey coconut granola

Recipe adapted from Mel's coconut granola

1 1/2c old fashioned oats
1/2 c chopped almonds
1/2 c chopped cashews
1/2c shredded coconut
3 T brown sugar
2 T coconut oil
2 T honey
1/4 tsp salt
1/2 c raisins or Crasins

Preheat 250*
Toss oats, nuts, coconut & brown sugar together.
In a small bowl melt the oil & honey together. Stir in the salt.
Pour over oat mixture. Toss well & coat everything.
Pour & spread onto a cookie sheet that's covered with parchment!!
Bake for 45 min stirring half way through. Bake until golden brown.
Keep an eye on it. The honey will turn it brown quick.
Let cool on tray. Scoop into a bowl. Break up any big clumps, toss in dried fruit.

Yummy!!

Bagel Dough (Bread Machine)

1-1/2 cups water
1 teaspoon salt
1 tablespoon brown sugar, packed
4 cups bread flour
2-1/4 teaspoons dry yeast

~Add ingredients in order.
~Select dough option on bread machine.
~At the end of the program, punch down dough.  Let rest 5 minutes.
~Lightly dust work surface with flour.  Shape dough into a 12-inch-long cylinder.  Cut into 12 1-inch pieces.  Roll each piece into 10-inch-long ropes.
~Form each rope into a circle, overlapping ends slightly.  Fold right end over left end.  Tuck under and pinch gently to hold together.  Place bagels on baking pans sprinkled with cornmeal.  Cover and let rise 30 minutes.
~Preheat oven to 375 degrees F.
~Brush top and bottom of bagels with egg wash (2 large eggs beaten with 1 TBSP water).  Sprinkle top and bottom with toppings, if desired. Let dry on a wire rack 10 minutes.
~Bake in the center of oven, 15 minutes.  Turn over and bake 10 minutes longer, or until golden brown.
~Cool to room temperature on a wire rack.

Variations:

Cinnamon-Raisin Bagels

Add 1 teaspoon ground cinnamon and 1/2 cup raisins to the dough, 5 minutes before the end of the last kneading.

Whole-Wheat-And-Honey Bagels

Eliminate the brown sugar, and add 3 tablespoons honey to the dough.  Use 3 cups bread flour and 1 cup whole-wheat flour.

Those are the only options in the book but I'm sure your imagination could create whatever you wanted!

Dana's Cookies (Alisha's version)

1 cup butter flavored crisco
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
2-1/2 cups flour
1 tsp baking soda
1 tsp salt
2 cups chocolate chips

Cream together first 5 ingredients.  Add remaining ingredients.  Stir in chocolate chips at the end.  Bake at 325 degrees for 8-10 minutes on an ungreased cookie sheet.  Allow to cool on cookie sheet for 10 minutes before moving to cooling rack to finish cooling.

Freezer option: Using a cookie scooper, put cookie dough on ungreased cookie sheet (can be close together to fit more on) and freeze over night in freezer.  Next day, move them all to a freezer ziplock bag.  Write instructions on bag "Bake at 325 degrees for 15-18 minutes"

I love these cookies more after freezing them.   And it is great because then I'm not tempted to eat the whole batch at once.  I can get out as many as I want and leave the rest for later.

Chex Muddy Buddy

6-9c chex cereal
1 c chocolate chips
1/2 c peanut butter
1/4 c butter (half a stick)
1 t vanilla
2 c powder sugar

Mix chocolate chips, peanut butter and butter in a microwaveable bowl. Microwave for 30 seconds. Stir. Microwave again until chips are melted. No more than 30 seconds. Don't burn the mixture.
Add in the vanilla.
Mix with the cereal. Completely coat.
A sealable bowl or ziplock gallon bags work best. Plus kids love to shake for you.
Add powder sugar and completely cost again.
