Pizza Crust (Bread Machine)

1 cup water
1 tablespoon olive oil
1 teaspoon salt
3 cups flour
1-1/2 teaspoons dry yeast

Add ingredients into bread machine in order.
Select dough setting
At the end of the program, punch down the dough.  Let dough rest for 5 minutes.

Preheat oven to 500 degrees.
Lightly spray pan.
Roll out dough.  Use your favorite pizza toppings.
Place pan in bottom third of oven and bake 20 to 30 minutes, or until topping is bubbly and bottom is lightly golden.
Will make a 16" round pizza or can be used in a 9x13 pan.

I like to divide my dough in two and do a smaller pizza (about medium size) and also a cheese bread.  I allow my cheese bread to rise while the pizza is cooking and then put it in above the pizza for the last 10 minutes.  Once the pizza is done, if the cheese bread needs a little more time, I let it stay in.  I've also cooked the cheese bread separate all together to allow it to rise even more before baking.

Crock Pot Chicken Pot Pie Stew

Crock Pot Chicken Pot Pie Stew

Ingredients:
1 lg skinless, boneless chicken breast, cubed
2 red potatoes, quartered
4 oz pkg baby carrots
1/4 cup chopped celery
1 can cream of potato soup
1/2 tsp garlic salt
1/4 tsp celery salt
pepper, to taste
4 oz frozen mixed vegetables
biscuits

Combine all ingredients except frozen mixed vegetables.  Cook on high for 5 hours.  Stir frozen mixed vegetables into slow cooker, cook for 1 more hour.

Serve over biscuits

This is a modified version of the original recipe.  It originally calls for cream of chicken soup and a chicken bouillon cube but I found that to be way too salty for me.

Pineapple Salsa Chicken

If you like fruit salsas you'll love this dinner from Mel's Kitchen Cafe.

4-6 chicken breasts
1 can black beans, drained rinsed
1 can white beans, drained rinsed
1 20 oz can crushed pineapple
1 cup Salsa

Put all ingredients in your crock pot. Cook on low for 6 hours. Shred chicken. Serve on tortillas with your favorite toppings. Sour cream, cheese, cilantro etc. serves 8

I cut this recipe in half. It still made a lot. I only had an 8 oz can of pineapple chunks. I drained it and threw it in the food processor for a quick buzz to make it crushed.
Trav loves spicy food so I used half medium and half mild salsa. Turned out the perfect heat and sweet mix.
I saved the other half cans of beans to make burritos and quesadillas for lunch tomorrow. Yum!!
