Pizza dough and BBQ Chicken Pizza

Pizza Dough (3 Medium size)

3 cups water microwave 1 ½ minutes for temp
1 ½ Tbsp. yeast
1/3 cup sugar
3 tsp. salt
6- 6 ½ cups flour
1 ½ Tbsp. oil
oil and corn meal for pizza or cookie sheets
melted butter

Mix water, yeast and sugar in  dough mixer, let proof 5 minutes.
Add salt and then 2 cups flour and oil.  Mix until flour has combined with outher ingredients well.  Then add 2 more cups flour and repeat step.  Add 2 more cups flour and knead for 3 minutes and wait to see if remaining ½ cup flour needs to be used.  Once all flour has been added knead for full 5 minutes.  Take out and place in greased bowl or air tight container and let rise in warm place for at least ½ to 1 hour.  This is when I prep my pans with oil and corn meal.  Oil pans well and sprinkle corn meal over the oil.  And get my ingredients ready for toppings.
Divide dough into 3rds and form into shapes.  Roll out dough or shape into pans.  Add desired pizza toppings!  Suggestions below for my favorite chicken BBQ pizza!
Bake @ 400° for 15-20 minutes or until cheese is lighted browned on top.

Chicken BBQ Pizza
I only make 1 BBQ pizza because me and Michael are the only ones that eat it!
Here is the ingredients for 1!

1 large chicken breast cooked, cut up or shredded
1 cup favorite BBQ sauce, divided in half, (I love Sweet Baby Rays Honey BBQ)
2 green onions or ¼ medium yellow or red onion sliced
½ green pepper (opt)
1 cup grated mozzarella or mozzarella and cheddar blend

After chicken is cooked and cut or shredded, add ½ cup BBQ sauce and coat completely.  Add remaining, BBQ sauce to pizza dough and spread evenly. Top with BBQ chicken, onions, green pepper then cheese.  Bake at least 20 minutes, but when cheese starts to brown you’ll know it’s done!
