Snickerdoodle Cookies

½ cup + 2 Tbsp. margarine or butter
1 ½ cups sugar
2 eggs

Beat ingredients together.

In a separate bowl combine:

2 ¾ cups flour
2 tsp. cream of tartar
1 tsp. baking soda
¼ tsp. salt

Gradually add in flour mixture to the sugar mixture.

(I like to refrigerate the dough for at least 30 min. before the next step.  It is easier to shape the dough.)

In a small bowl, combine: 2 tsp. cinnamon and 2 Tbsp. sugar.

Roll the dough into balls, about an inch in diameter, and roll into cinnamon sugar.  Place on a cookie sheet and bake at 400 degrees for 9 min.  Do not over bake; cookies will be light in color.  Remove cookies from oven and let them cool on the pan for a few minutes.

Makes 3 dozen cookies!
